Fresh potato salad with cream, tzatziki sauce (Greek cucumber sauce) and chopped feta cheese!
Tzatziki (aka Greek cucumber salad) and potato salad are two of my favorite summer dishes, and they go perfectly with each other! In fact, this is a potato salad mixed with fresh and creamy tzatziki! The main ingredient is potatoes, which are mixed with a simple tzatziki sauce, which replaces half of the plain Greek yogurt with mayonnaise, which is a common ingredient for dressing potato salads. I like to add crumbled feta cheese to make it fragrant, and chopped green onions to make it fragrant.
This tzatziki potato salad is the perfect summer side dish for any dish!

Ingredient
1 1/2 pounds diced potatoes (peeled if desired)
1/4 Cup plain Greek yogurt
1/4 cup mayonnaise (or plain Greek yogurt)
1/2 cup pitted and pitted cucumbers, grated and squeezed to drain
1 garlic clove, grated
1 tablespoon fresh dill, finely chopped
1 tablespoon chopped fresh mint
2 tablespoons lemon juice (~ 1/2 lemon)
salt and pepper to taste
1/4 cup grated feta cheese (optional)
2 green onions, thinly sliced

Put the potatoes in a large saucepan, cover with water, add a pinch of salt, bring to a boil, turn down the heat and simmer until the potatoes are soft, about 8-10 minutes, then remove from the water and let cool.
Mix yogurt, mayonnaise, cucumber, garlic, dill, mint, lemon juice, salt and pepper.
Mix potatoes, cucumber mixture, feta cheese and green onions and enjoy!
Note: you can use almost any potato for potato salad! Potatoes in a rusty brown form will begin to crumble and lose their shape, and their consistency will become creamy. White and red potatoes keep their shape well and have a dense consistency. The golden yellow potato is somewhere in the middle.
As an option: use your favorite herbs!
To choose from: Add 1/4 cup diced red onion.
To choose from: add 1/4 cup of kalamata olives.
Tip: the cooked salad has a pleasant taste, and its taste improves after several hours of storage in the refrigerator!
