Although I love eating chimichurri chicken the way it is, it is also very good in these sandwiches. The combination of grilled chicken with fresh herbs with sweet fried red pepper, creamy fresh mozzarella, avocado, mayonnaise and chimichurri sauce is simply fantastic! These sandwiches are very easy to make and they are perfect for any summer occasion!
The ingredient
4 rolls, sliced and, if desired, fried/grilled (gluten-free for gluten-free)
1/4 Cup milk
1 cup arugula
2 smoked red peppers (left), cut in half (4 halves)
1 pound chimichurri chicken (link), cooked and sliced as desired
1 ball of fresh mozzarella, sliced
1 avocado, sliced
1/4 cup chimichurri sauce (link)
